My Favorite Recipes...

Bella and I baked up some of our favorite goodies this past weekend, which is one of our favorite things to do, and we are sharing the recipe with you today. They are both gluten and dairy free (But you would never know!!!) Trust me, I have brought these to mommy groups, family events, new mommas, etc and everyone is shocked by how delicious they are and always ask for the recipes.

'Gluten and Diary Free Oatmeal Chocolate Chip Cookies"

Ingredients:

(Recipe found on the back of my Trader Joes Rolled Oats)
1/4 cup butter (Earth Balance for dairy free)
1 1/4 tsp baking soda
3/4 cups sugar
3 cups Trader Joes Rolled Oats (Just a hunch, but I bet other rolled oats would work)
3/4 cup brown sugar
6 oz chocolate chips (Enjoy Life Chocolate Chunks for dairy free)
2 eggs
1/2 cup sunflower or chopped walnuts
1 tsp vanilla
1 cup peanut butter

Instructions:
Preheat oven to 350 degrees. In a large bowl, combine sugar, brown sugar and butter and beat until creamy. Add eggs, vanilla and baking soda and mix well. Add peanut butter and mix. Stir in oats, chocolate chips and nuts. (I like to place my dough in the fridge for a couple hours so that the cookies are don't flatten so much). Place teaspoon full of dough on a lightly greased cookie sheet about 2 inches apart. Bake 10-12 minutes until lightly brown around the edges.

"Gluten and Diary Free Oatmeal Chocolate Chip Banana Muffins"

Ingredients:
2 cups oatmeal {make sure you use gluten-free oats}
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
3 very ripe bananas, mashed
1 tablespoon olive or coconut oil
1/3 cup brown sugar, plus 1 tablespoon
1 teaspoon pure vanilla extract
2/3 cup vegan chocolate chips*
3 tablespoons oatmeal

Instructions:
Preheat oven to 350 degrees F. Place liners in a muffin tin.

  1. Make oat flour: Place oatmeal into blender and blend for 1-2 minutes until oatmeal resembles flour. You may need to stop blender and stir oats a couple of times to ensure that all oats have been blended.

  2. Measure out just 2 cups of the oat flour and place in a medium bowl. Whisk in baking powder, baking soda, and salt; set aside.

  3. In a separate large bowl, beat mashed bananas, 1/3 cup brown sugar, vanilla extract, and oil for 1-2 minutes until the consistency is smooth and creamy. Slowly add in oat flour mixture and mix until just combined.

  4. Gently fold in chocolate chips. Pour batter into prepared muffin cups and sprinkle 3 tablespoons oatmeal and 1 tablespoon brown sugar on top. Bake for 18 minutes.
